This happens randomly with random Sinner's Sacrifices in a match. At times, it may appear that they are missing souls visually. There can be normal ones with souls inside in the same match. As far as gameplay goes, they function as you'd expect.
Also, after the last few updates, there are no melee hit animations for Sinner's Sacrifice, they are just static. As far as I remember, there were hit reaction animations when they were first introduced.
UPD. It seems like the animations disappear randomly just like the souls. Sometimes there are both animations and souls inside.
