Whenever you melee a target that is parried you will not benefit from blindside damage even when landing the punch in the backside of them. It seems the bonus melee damage from parried targets does not stack with blindside.
EDIT: Sorry it seems the parry gym bot is always facing you even when parried so blindside does work, just not on the dummy bot since it is able to always face the player while being stunned.
